Apple, Cranberry, Pecan Salad
This is a quick, light and healthy salad recipe that can be thrown together in literally minutes.
Ingredients
1 cup baby spinach leaves or mixed field greens
1 tablespoon chopped raw pecans
1 small apple, cored and diced
1-2 tablespoons balsamic vinaigrette salad dressing, or to taste
Optional ingredients
¼ shredded carrot
¼ avocado, peeled and diced
*Remember to use fresh, organic produce whenever possible. Also, pay special attention to the labels on any salad dressings. Vinaigerette dressings should contain extra virgin olive oil and NO high fructose corn syrup.
